Raspberry and Coconut Cupcakes
  • 125g butter, soft and ready
  • 220g sugar
  • 3 eggs
  • 105g plain flour
  • 2 teaspoons baking powder
  • 40g shredded coconut
  • 80g sour cream
  • 150g frozen raspberries

 Mix butter sugar and eggs well in a mixer, or by hand, before adding the rest of the ingredients.

 Spoon them in to Cupcakeliners
 try not to spill...
 And bake them in a preheated oven on 180C for about 30 minutes.
